Crunchy Romaine Salad with Parmesan

Ingredients

Vinaigrette

  • 3 tablespoons freshly squeezed lemon juice
  • 6 tablespoons extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp crushed red pepper flakes (optional)

Salad

  • 2 hearts of romaine lettuce, trimmed
  • 3/4 to 1 cup freshly grated Parmesan cheese
  • 2 small shallots, peeled and thinly sliced

Instructions

  1. Tear, chop, or thinly slice the romaine lettuce. Wash and spin or pat dry thoroughly.

  2. In a jar or small bowl, combine the lemon juice, olive oil, salt, pepper, and red pepper flakes (if using).

  3. Place the lettuce, Parmesan, and shallots in a large bowl. Pour the dressing over and toss to combine. Serve immediately.

Notes

  • Keep components separate until serving to maintain crispness.
