Crunchy Romaine Salad with Parmesan

Ingredients
Vinaigrette
- 3 tablespoons freshly squeezed lemon juice
- 6 tablespoons extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp crushed red pepper flakes (optional)
Salad
- 2 hearts of romaine lettuce, trimmed
- 3/4 to 1 cup freshly grated Parmesan cheese
- 2 small shallots, peeled and thinly sliced
Instructions

Tear, chop, or thinly slice the romaine lettuce. Wash and spin or pat dry thoroughly.

In a jar or small bowl, combine the lemon juice, olive oil, salt, pepper, and red pepper flakes (if using).

Place the lettuce, Parmesan, and shallots in a large bowl. Pour the dressing over and toss to combine. Serve immediately.
Notes
- Keep components separate until serving to maintain crispness.
