Healthy Pasta Salad

Ingredients
Salad
- 8 1/2 oz fusilli pasta (or any pasta)
- 1 cup cherry tomatoes, halved
- 1 large red onion, sliced
- 1 medium cucumber, sliced
- 1/4 cup black olives, pitted
- 1 large red bell pepper, diced
- 1/2 cup feta cheese
- 2 Tbsp fresh parsley, minced
Dressing
- 1 clove garlic, minced
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1 small lemon, juiced
- 2 Tbsp olive oil
- 2 Tbsp maple syrup
- 1 Tbsp Dijon mustard
Instructions

Cook pasta according to package directions until al dente (approximately 8 minutes). Drain in a colander.

Prepare dressing by combining minced garlic, thyme, oregano, salt, lemon juice, olive oil, maple syrup, Dijon mustard, and black pepper in a small bowl.

Mix cooked pasta with tomatoes, onion, cucumber, olives, and bell pepper in a large bowl. Pour dressing over and combine.

Crumble feta cheese over salad and garnish with fresh parsley before serving.
