Healthy Pasta Salad

Ingredients

Salad

  • 8 1/2 oz fusilli pasta (or any pasta)
  • 1 cup cherry tomatoes, halved
  • 1 large red onion, sliced
  • 1 medium cucumber, sliced
  • 1/4 cup black olives, pitted
  • 1 large red bell pepper, diced
  • 1/2 cup feta cheese
  • 2 Tbsp fresh parsley, minced

Dressing

  • 1 clove garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1 small lemon, juiced
  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 1 Tbsp Dijon mustard

Instructions

  1. Cook pasta according to package directions until al dente (approximately 8 minutes). Drain in a colander.

  2. Prepare dressing by combining minced garlic, thyme, oregano, salt, lemon juice, olive oil, maple syrup, Dijon mustard, and black pepper in a small bowl.

  3. Mix cooked pasta with tomatoes, onion, cucumber, olives, and bell pepper in a large bowl. Pour dressing over and combine.

  4. Crumble feta cheese over salad and garnish with fresh parsley before serving.
