Lemon Chicken

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 1/2 lbs. boneless, skinless chicken breasts, cut into 1-inch strips
  • 3/4 teaspoon dried Italian seasoning
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth
  • Zest and juice of 1 lemon

Instructions

  1. Season the chicken strips with Italian seasoning, salt and pepper.
  2. Heat oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on one side, then flip and cook an additional 2-3 minutes.
  3. Add the garlic, broth, and lemon zest and juice to the pan.
  4. Lower the heat to medium and simmer until the chicken is cooked through, an additional 2-3 minutes.
  5. Serve with sauce drizzled over the top and enjoy!

Notes

The recipe calls for boneless, skinless chicken breasts that are cut into 1-inch strips. This helps them cook more quickly - and evenly - in the pan and speeds up the dinner.

You could certainly substitute chicken thighs if you prefer, but you’ll need a longer cooking time.

Lemon zest and fresh lemon juice are necessary here; this dish won’t taste the same if you use bottled lemon juice.
