Lemon Pasta

Ingredients
- 8 ounces spaghetti
- 4 tablespoons unsalted butter, sliced into pats
- 2 tablespoons lemon zest, plus more for garnish
- 2 garlic cloves, minced
- 1/2 cup freshly grated Parmesan cheese, plus more for serving
- 1 tablespoon fresh lemon juice, plus more to taste
- Sea salt and freshly ground black pepper
- Chopped fresh parsley or basil leaves, for garnish

Boil salted water and cook pasta al dente per package directions. Reserve 1 cup of starchy cooking water before draining.

In a large skillet over medium heat, melt butter until foamy. Reduce heat to low, add lemon zest and minced garlic, stirring for 1-2 minutes until fragrant. Remove from heat if pasta still cooks.

Transfer cooked pasta to the skillet using tongs. Add 1/2 cup pasta water and cook over low heat, tossing until a sauce forms. Stir in half the cheese, then the lemon juice and remaining cheese. If too thick, add more pasta water. Season with salt, pepper, and additional lemon juice.

Garnish with lemon zest and fresh herbs. Serve with additional Parmesan.
