Turkey Burrito Bowls

Ingredients

Turkey

  • 1 tablespoon avocado or olive oil
  • 1 lb ground turkey
  • 1/2 cup onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon apple cider vinegar
  • 1/2 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chicken broth
  • 1 teaspoon arrowroot starch

Bowls

  • 1 batch cilantro lime coconut rice
  • 1 can black beans, drained and rinsed
  • Pico de gallo
  • Avocado, sliced
  • Romaine lettuce, shredded
  • Radishes, sliced

Instructions

  1. Heat a large skillet over medium-high heat. Add the oil and then the ground turkey. Brown the meat and break it up as it cooks.

  2. Add the garlic and onion. Continue to brown the meat until it is no longer pink.

  3. Lower the heat to medium and add the tomato paste, apple cider vinegar, and spices. Cook for another minute until fragrant.

  4. Add the chicken broth and arrowroot starch, stir until well combined. Let the ground turkey simmer in the broth until thickened, then remove from heat.

  5. Assemble the burrito bowls with cilantro lime coconut rice, seasoned turkey, black beans, pico de gallo, avocado, lettuce, and radishes.
